Massaged Kale, Pear & Goat's Cheese Salad

60g kale

1 tbsp freshly lemon juice

1 tbsp balsamic vinegar

1 tbsp olive oil

pinch of sea salt

80g soft goat’s cheese, e.g. feta

1 ripe pear

small handful of toasted almonds



  1. To prepare the kale, remove stalks, if any, and chop the leaves into 1 inch large pieces. Wash and pat dry. Place in a large bowl and combine with the lemon juice, balsamic vinegar, olive oil and salt. Rub well making sure the leaves are all well coated. Set aside for 5 minutes.
  2. Slice the pear into thin pieces, crumble the almonds and cheese, and combine with the massaged kale. Gently toss together to mix. Enjoy!
